On the other hand, if an adult with full glycogen storage consumes carbohydrates, they might or might not be turned into fat. This largely depends on the GI and GL of the food in question. If the GI and GL of carbohydrate consumed are low, then it will be digested and absorbed gradually. The glucose from the carbohydrate will enter the blood stream gradually as well, and the body can utilize it without turning it into fat to satisfy current energy needs.

If the food consumed is high both in GI and GL, it can be turned into fat even if the glycogen reserves are not full, simply because blood glucose levels spike too fast and too high for the body to efficiently utilize the glucose. This can partially refill glycogen stores and partially be turned into fat. Still, when low on glycogen – such as after a long session of exercise or any other activity that burned in excess of 1000 kcal – a high GI, healthy source of carbohydrates is a good option, as it helps the body not only to refill glycogen stores, but actually makes it store more glycogen, which will help next time one exercises.
